Working With Chocolate Paste Part 1
with Tracey Mann

This class is an introduction to working with chocolate
paste, we will be covering a cake in white chocolate
paste, using a beadmaker, making chocolate fans and
roses and concluding with a short demonstration
using transfer sheets. We will be discussing using
colours with chocolate and lots of tips on how to handle
chocolate in the summer!

Working with Chocolate Paste Part 2
with Tracey Mann

 This class is the second part of Working with
chocolate paste, and is recommended for students who
have already complete working with chocolate paste
part 1.In this class we will be recapping on covering a
cake with chocolate paste, making 3 different flowers,
roses, gereberas and orchids, using a sugar gun,
silicone moulds and we will be making an individual
cake with a transfer sheet wrap. We will also be
discussing using colour in more detail, and all the
latest recommendations for working with chocolate.

Tracey’s Cakes Chocolate Covering Paste
White, Milk and Dark
Belgian Chocolate Covering Paste

A Belgian chocolate covering paste, suitable for covering cakes without mixing with sugarpaste or marzipan for a rich chocolate flavour covering.
The paste is made from Belgian Chocolate and has a six month shelf life. It can be used to make chocolate roses.

White chocolate paste
This is my most popular paste, used for covering wedding cakes. It has a delicious taste and is easy to work with.

Milk chocolate paste
Easy to apply to a cake, very similar consistency to the
white chocolate paste but with a milk chocolate taste.

Dark chocolate paste
This paste is ideal for creating a glossy look
chocolate cake, either cover you cake with the paste
and apply confectioners varnish or pour chocolate
ganache over the cake.
